These ice creams have sneaky vegetables hidden inside them

If you have fussy kids, you’ve probably got a collection of sneaky tricks designed to get them to eat their vegetables. Grating carrot into muffin mix, sprinkling cauliflower through Sunday morning scrambled eggs or cramming pureed courgette into burger patties.

One Florida woman has mastered a stealthy and healthy trick that you might not have tried yet…

Jessica Levison has created Peekaboo, an ice cream loaded with vegetables.

Jessica was another parent tired of her kids not eating their greens. So she began experimenting in the kitchen.

After taste tests with kids and adults, Peekaboo ice cream was born.

It’s now available in five flavours, all filled with nutritious serves of veg. The mint choc chip incorporates spinach, vanilla with courgette, strawberry sneaks in carrots, cotton candy mixes in beets, and everybody’s favourite, chocolate, includes cauliflower.

‘We are aiming to disrupt indulgent foods and make them better for you. Our mission is to blur the line between vice and virtue,’ Jessica said in a statement.

Each tub is made with organic ingredients to create a gluten-free, non-GMO, and kosher ice cream.

Jessica specifically chose these veggies with more subtle flavours so that consumers wouldn’t be able to taste them.

The strawberry flavour includes 15% of one’s recommended daily serve of Vitamin A and 20% of one’s recommended serve Vitamin C. Vanilla also packs in 15% of one’s recommended serve of Vitamin A.

The ice cream is currently only available in the US, selling for $10 a tub.
